- 4-6 boneless skinless chicken thighs
- 1 bag shredded cabbage
- 1 onion chopped
- 1 red pepper chopped
- 1 orange or yellow pepper chopped
- 2 1/2 tsp salt
- 1 tsp pepper
- 1 tsp ginger
- 1/2 tsp garlic powder
- 1 tbs brown sugar or coconut palm sugar
- 1 can light coconut milk
Combine all ingredients except coconut milk. Cook on low about 6 hours. Stir in coconut milk 15-20 minutes before serving. This can be served with or without rice.
